Description

This simple brownie cookies recipe is a must to try! They are chewy and gooey inside with a crispy edge. If you look at the ingredients list, you will notice how much chocolate it requires.  At least half of the cookie batter is chocolate. Delicious! If you are a chocolate lover, get ready to bake.

Ingredients
  • 1 1/4 cup dark chocolate chips
  • 1/4 cup butter
  • 2 eggs
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • a pinch of salt
  • 1/2 cup flour
  • 1 teaspoon baking powder
Instructions
  1. Melt the chocolate chips. I like to melt my chocolate in the microwave using the 30 seconds increments, stopping and mixing in between each cycle.
  2. Add butter and mix so the chocolate and butter are blended. Set it aside.
  3. To a different bowl add eggs, brown sugar, granulated sugar and a pinch of salt. Mix until lighter in color.
  4. Pour the egg batter to the chocolate. Make sure the chocolate ganache is not too hot. At room temperature or slightly warm is perfect. Mix until blended.
  5. Through a fine strainer add flour and baking powder. With a spatula, mix just until the flour is mixed in.
  6. Line the baking tray with parchment paper. Use a half size scoop to shape the cookies. There should be enough batter for about 10 cookies.
  7. Bake at 350 Fahrenheit for about 16-18 minutes. The longer you bake, the crispier the cookie will get.
  8. While the cookie is still hot, you can use the cookie cutter to give the cookies a more defined shape.
